The National Health Commission held a press conference to introduce the seasonal solar terms and health-related situations, and answered questions from reporters. Liu Zhaoping, Deputy Director of the Food Safety Assessment Center of the National Health Commission, stated that in order to prevent foodborne diseases in summer, the most important thing is to follow the five basic principles of food safety, namely, maintaining cleanliness, separating raw and cooked food, cooking thoroughly, ensuring safe food temperature, and using safe water and raw materials. Specifically, the following points should be achieved: first, choose fresh ingredients, process them in a timely manner after cleaning, and try to make them as soon as you buy them or as soon as you cook them to keep them fresh. During processing, the beans should be cooked thoroughly, such as kidney beans and homemade soybean milk, and must be cooked before eating. The second is to properly store and handle food. For unused ingredients or leftover dishes, they should be promptly placed in the refrigerator for refrigeration and freezing, ensuring that raw and cooked are separated, and there is a certain gap between the foods to avoid cross contamination. It is recommended to refrigerate according to category, with the upper layer generally containing ready to eat cooked food and milk, and the lower layer containing fresh meat, raw fish, etc. that require heat processing. Although low-temperature refrigeration in the refrigerator can inhibit the growth of some bacteria, some bacteria are not afraid of cold or freezing, such as Listeria monocytogenes, so it is not recommended to buy a lot of food at once and put it in the refrigerator. Additionally, leftover food and vegetables taken out of the refrigerator must be thoroughly heated before consumption. The third is not to pick, buy, or eat wild mushrooms. The main reason for poisonous mushroom poisoning is that some foodies are too blind and confident, always thinking that what they have picked is edible mushrooms. So I would like to remind everyone not to have a lucky mentality and not to eat wild mushrooms. If there are symptoms of food poisoning, such as nausea, vomiting, abdominal pain, diarrhea, or even hallucinations after eating mushrooms, it is necessary to immediately stop consuming these suspicious foods and seek treatment as soon as possible. At home, emergency self rescue measures such as inducing vomiting can be taken first, and then professional treatment can be sought at the hospital as soon as possible to avoid other more serious problems.
